Build the classic sandwich with chicken sausage or back bacon, or use a crispy chicken burger for a hearty brunch version.



Ingredients
- 4 English muffins, brioche buns, or biscuits
- Chicken Breakfast Sausages, Back Bacon, or Fully Cooked Crispy Chicken Burgers, enough for 4 sandwiches
- 4 large eggs
- 4 slices cheddar or havarti
- 1 cup baby spinach or arugula
- 1 ripe tomato, sliced
- 1 tablespoon butter
- Salt and black pepper
Maple-mustard sauce
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 2 teaspoons maple syrup
- 1 teaspoon apple cider vinegar
Method
- Mix the sauce. Stir mayonnaise, Dijon, maple syrup, and vinegar until smooth. Refrigerate while you prepare the sandwiches.
- Cook the filling. Prepare the chosen sausage, back bacon, or crispy chicken burger according to its package directions. Keep warm.
- Toast the bread. Split the muffins or buns and toast until the cut sides are golden. Spread both halves lightly with maple-mustard sauce.
- Cook the eggs. Melt butter in a non-stick skillet over medium heat. Crack in the eggs, season, and cook to your preferred doneness. Cover for the final minute so the tops set gently.
- Melt the cheese. Place one cheese slice over each hot egg and cover the pan for 30 to 60 seconds.
- Assemble. Layer greens, tomato, the hot meat, and a cheesy egg on each base. Close the sandwiches and serve immediately.
Freezer option
Assemble sandwiches without tomato or greens, cool completely, wrap individually, and freeze. Reheat until the centre is steaming hot.

Bake eggs in a greased 9-by-13-inch pan at 350 F until just set, then cut into squares for fast assembly.
